Green Tea

Green tea is touted as being the most healthful of all teas but know that ALL teas have health benefits so it doesn’t matter the type of tea you drink! Green tea is the classic tea of China and each region of China has developed its own methods of processing. Most processing techniques include sun-drying, pan-drying, basket-firing, steaming and others. There is hand rolling, twisting and tight ball rolling that make green tea unique. Pan-fired green teas encompass more unique leaf styles than any other category of teas. Styles include: straight (Dragonwell), balled (Gunpowder), bold and twisted (Mao Feng) and curly (Bi Lo Chun). To brew a great cup of green tea, a guideline of 170 degrees for up to 3 minutes is suggested but please know that there is no “EXACT” way to infuse tea because every person has a unique preference for how they like their tea to taste. In other words, taste is subjective and don’t let anyone tell you that you HAVE to do your tea in a particular way. I’ve had a customer who loves green tea but she insists on using boiling water and steeping it for 6 minutes~that makes green tea very bitter but that’s how SHE likes it and we accommodate her! That is the only way she will drink her tea; it’s her way to a good cuppa! Notice how the green leaf has begun to roll up as compared to the white tea leaf. Caffeine is lower because there has been some pan-drying or basket-firing instead of just sun-drying or air-drying in the withering process.
